Executive Chef Alberto “Xavier” Vargas
Founder and Executive Chef of Xavier’s Palate
Cooking has always been part of my story. As a child, while my mother worked long hours and my father traveled for work, I took it upon myself to cook for my sisters at just eight years old. What started as necessity soon became passion — a love for food, creativity, and the joy of serving others.
After 14 years working with TSA, I decided it was time to follow my calling and share my culinary gifts with the world. I founded Xavier’s Palate to bring people together through food and create meaningful dining experiences right in the comfort of their own homes.
Through my Leña Experience, I showcase beautiful cuts of meat cooked over open fire — inspired by the bold, soulful flavors of South American cuisine. Marrying into a Brazilian family and growing up in Miami gave me a deep appreciation for cultural diversity and flavor fusion, which inspired the name “Xavier’s Palate.”
I am a proud graduate of Auguste Escoffier School of Culinary Arts, where I earned my diploma in Culinary Arts and Operations. Today, my greatest joy as a chef is creating unforgettable moments for my guests — hosting them in a way that makes them feel at home, connected, and celebrated.
